The Andalusians sacked Joan Francesc 'Rubi' in June with the club 14th in the table, appointing sporting director Alexis Trujillo at the helm until the end of the current campaign.
"Real Betis have signed Chilean coach Manuel Pellegrini to take over from next season," said the club in a statement.
"The contract links Pellegrini with the Heliopolis side until June 30, 2023.
"Betis are going for a high-level coach with grand international prestige to elevate the first team's level of performance in a three-year project."
Pellegrini, 66, was sacked by West Ham United earlier this season after one season in charge.
