The sides traded tries in the early stages of the game before three straight to the Waratahs saw them start to build a lead that the Roosters couldn't overturn as they came away with a 46-26 victory.
Moahoni Lelei and Sam Rauluni lead the way for the Waratahs with two tries each while Niu George, Graham Levu, Ben Vearing and Tom Sellars scored a try each.
For the Roosters, it was Robbie Simpson who led the way with two tries while Billy Robb, Dillion Bartter and Tony Leadbitter got over for one each.
The Waratahs have a top of the table showdown with Yanco-Wamoon after the bye while the Roosters have two weeks off with a club bye following the June long weekend.
