After an initial planned opening date of summer 2021, construction is finally set to begin next month at 142 Yambil Street following COVID-19 attributed delays.

'Bird Nor Beast' is set to be Griffiths hottest new destination, offering curated and locally produce beers, a beer garden, restaurant and even function space for the community to enjoy.

Alongside partner Megan Tai, Adam Gaffey has a keen obsession with brewing, and is excited to see their shared dream finally come to fruition.

Since initial development plans were approved, some further modifications to the space were made and then approved again in December 2021 to make the space more efficient.

"We made a series of structural changes to the level, height and width of the designs but internally and capacity wise our plans for the space remain the same," Mr Gaffey said.

According to Mr Gaffey, they were taking one step at a time.

"We are taking everything phase by phase and hope to be operational sometime within the next six months, with construction and excavation works set to commence in four weeks time," Mr Gaffey said.

"COVID created a lot of uncertainty for our plans but we are keen to get Bird Nor Beast up and running as soon as we can."

Everyone contracted to work onsite is local and whilst the increasing cost of raw materials due to the pandemic has put a strain on the project, Mr Gaffey says it will be worth it.

"We are excited to develop our own recipes for craft beers, brew onsite and will endeavor to source all our raw materials from the region as much as we can," Mr Gaffey said.

"Our plan is for the venue to be open seven days a week with the full bar and taproom experience, tasting paddles, brewery tours, a beer garden, play equipment for kids and more."

There are even plans in the future to host small weddings at the venue.

"It has just been really interesting seeing how many people in the community not only want to drink craft beer but produce their own so we are very excited that groundworks are finally set to begin for our microbrewery," Mr Gaffey said.
